This is probably the fastest, easiest omelet you will ever make. It almost doesn't even deserve to be called a "recipe," since it's more of a method than anything else! Of course, you can use any type of egg substitute or real eggs; you can also add any type of vegetables, if you'd like! You might want to add salt and pepper to taste, based upon whatever you add to the eggs. I used hot chunky salsa, and I felt that was enough flavor for me.

SERVES 1 , 1 omelet (change servings and units)

    Spray a microwave-safe plate with nonstick spray.

    Pour All Whites into the plate and stir in salsa. Microwave on high for 3-5 minutes, depending on how well-done you like your eggs.

On a low carb diet, I have been eating yogurt and meal replacement bars for breakfast until I was blue in the face...This recipe is awesome!! I added carb free baby spinach and weight watchers cheese, I will jump out of bed tomorrow for this!!

    I do this all the time, works great for a quick breakfast! I use a micro-waveable cereal-type bowl, spray with cooking spray beat up an egg in it and cook for 1 min to 1 min 10 sec. I find I need to give a stir at 30 seconds or so otherwise I get a spot in the center that doesn't want to cook. Good on a couple of slices of toast with a slice of cheese. I've done it with salsa and without, both good! Thx for posting!
