Pineapple Lemonade

I haven't made this but it sure sounds like old fashioned summer goodness. The cook time is chill time.

SERVES 8 (change servings and units)

Ingredients

    In a saucepan combine the sugar with 2 cups water, bring the mixture to a boil over moderately high heat, stirring until the sugar is dissolved, and simmer the syrup, undisturbed, for 10 minutes.

    Let the syrup cool 1 hour in fridge and stir in the pineapple juice, the seltzer, and the lemon juice.
  3. 3
    Pour the mixture into tall glasses filled with ice cubes and garnish the drinks with the lemon slices and the mint sprigs.

I made this drink over the Labor Day holiday and it was really good, a little to sweet for me but I can adjust that. We did end up adding some limoncello for the adult drinks and it tasted ALOT better!! Will be making again...THANKS!!

    I love lemonade & I love pineapple so this is a match made in heaven. I used tap water rather than seltzer water as I wanted to keep it for a few days and didn't want it to go flat in the fridge. I made a half serve but found that it needed a lot more water than was called for, from a half serve of juices & syrups I ended up getting about 1.5 litres of lemonade so I think I ended up adding about 4 cups water for a half serve which was still lovely & sweet but not syrupy sweet. Great recipe & one I'm sure I will make again. Thanks Annacia!

    We love lemons and pineapple! We made this a bit simpler by using pre-sweetened pineapple juice and just mixed that with 1/2 cup sugar, the lemon juice, and seltzer. We served it in a pitcher filled with ice and although we didn't have mint leaves for the garnish, but we still enjoyed this refreshing drink! This is a winner!
