My whole family LOVED these. Made them for a picnic in the mountains. Changed things a bit...substituted turkey bacon for the regular, used egg substitute and low-fat cheese. Made the mini size, but will make more in a regular muffin pan so my girls can have them for breakfast. Oh, instead of sauteeing the bacon and vegetables, I drizzled them all with the olive oil and softened them in the microwave. Just didn't feel like dirtying a fry pan, I guess, but it worked nicely.

OUTSTANDING LITTLE BITES for the last finger food buffet I had ~ I was hoping for a couple for lunch the next day, but that didn't happen, so I made another batch! So tasty, so healthy, so easy to make, AND a definite keeper! [Tagged, made & reviewed in Please Review My Recipe]

You can't say no to Noo's Zucchini Bites! They are terrific. So much so, that I made a single batch, ate one, then realized that these would not go far. I then doubled the recipe, right there and then, and made more. I made them in regular muffin sized tins for a quick breakfast. I lowered the fat content by not cooking the vegetables in oil, just chopped real small so they would cook in the oven. I also substituted the full fat items by using turkey bacon, Eggbeaters, fat free cheese, fat free milk, and whole wheat flour. I cooked the turkey bacon in the microwave and broke into small pieces. Doubling the recipe and using low fat ingredients, gave a yield of 18 regular sized muffins @ 80 calories each. I baked them for 25 minutes at 350 degrees. You've got to try these!

This is a 5-star recipe because: it's delicious, it's easy, it's a kid-pleaser, and it is a really healthy, meatless entree! I made 12 larger sized "bites" in muffin tins, and then had just enough leftover to make 6 smaller, mini-sized zucchini bites. The only thing I did differently from the recipe was to leave out the bacon. My 7-yr old DD adored these, and now claims she wants these made for her birthday dinner. My 3-yr old ate four of them, without the usual struggle to eat vegetables. Thanks so much for a fantastic recipe, Noo! We will put this one into our regular rotation.
