If you love zucchini bread, why wouldn't you love zucchini cookies?

5 dozen (change servings and units)

Ingredients

Directions

    Cream together the shortening and sugars. Add eggs and beat well. Beat until fluffy.
  2. 2
    Stir in zucchini. Add dry ingredients. Add chopped nuts and dates.
  3. 3
    Drop by teaspoonfuls into greased cookie sheet. Bake at 375 degrees for 12-15 minutes.

    You can substitute chocolate chips or raisins for dates.
