This is the way I have been serving summer squash to my family to years. It is so easy and tastes great. I hope you enjoy it too!

SERVES 4 (change servings and units)

Ingredients

Directions

    Melt butter in large skillet.
  2. 2
    Add onion and cook just till tender.
  3. 3
    Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
  4. 4
    Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).

    I add lots of salt and pepper.

I used low fat butter and added some minced garlic yummy! We all loved this. My new favorite squash recipe

    I looove sauteed squash. I will say I use around three times as much onion as you call for - and toss in a few cloves of garlic. I would be proud to serve this to anyone. This is such a summer treat. Thanks!

    Bev, this was delicious! We loved the buttery taste the squash gets. It gets cooked, but not too soft. This is a simple basic recipe with a minimum of ingredients, yet it could be on the most elegant table! We used the salt and pepper and also a sprinkling of paprika for color. Thanks for a recipe I will use often!

    Delicious! This is how we like to cook (and eat) summer squash and zucchini, too. Sometimes I add a little minced garlic to the onions just before I add the squash. I've also sauteed thinly sliced carrots with the onions. What a simple yet delicious veggie dish to prepare while meat is on the grill. Thanks Bev!
