This is great with fresh tomatoes too. I add meat to this sometimes as well but it is great for dinner on a meatless night!!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Heat oil in large dutch oven.
  2. 2
    Add onions and garlic, cook till onions are translucent.
  3. 3
    Reduce heat, add potatoes, bell peppers and tomatoes.
  4. 4
    Season with garlic salt and pepper.
  5. 5
    Cover and cook till potatoes are tender, stirring occasionally and adding water as needed.
  6. 6
    Serve over rice or pasta.
