Fresh Fruit Salad With Coconut Cream

This is a great twist on a fresh summer fruit salad.

SERVES 4 (change servings and units)

Ingredients

Coconut cream

Directions

    Beat eggs and ¼ cup sugar in heavy saucepan. Beat in coconut milk and half and half. Stir over medium low heat till mixture thickens, about 4 min; do not boil.

    Strain into small bowl. Mix in vanilla and salt. Cool and chill.
  3. 3
    Arrange fresh fruit slices of your choice. Spoon cream on top of fruit and sprinkle toasted coconut on cream.
