Seafood Manicotti

This is incredible and usually reserved for special occasions.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Combine first 4 ingredients in a saucepan; cook over medium-high heat 30 minutes or until thickened and reduced to 2 cups; set aside.

    Cook manicotti according to package directions; drain and set aside.
  3. 3
    Heat butter in a large Dutch oven over medium-high heat; add onion and next 5 ingredients.
  4. 4
    Cook, stirring constantly, 5 minutes or until tender.
  5. 5
    Add shrimp and crabmeat, and cook, stirring constantly, 5 minutes or until shrimp turn pink.

    Cool 10 minutes, and drain well.
  7. 7
    Combine seafood mixture and whipping cream mixture.
  8. 8
    Fill manicotti shells, and place in 2 lightly greased 11x7 inch baking dishes.

    Sprinkle with cheeses, and cover with foil.

    Bake at 350 degrees for 15 minutes.

    Uncover and bake 10 additional minutes.

    Serve immediately.

this was excellent! But i ended up using two boxes of manicotti instead of the one box it called for. (not a problem, more to eat!)

    This is wonderful! My husband made this for our first v-day married! It is a bit messy though when stuffing the manicotti tubes so I would sugest using lasgana and rolling them.

    My husband and I prefer our food spicy and flavorful, so next time I make this, I’ll probably add more cayenne pepper or some pepper jack cheese. I would also add some parsley, coriander or cilantro to the filling (or accompanied sauce) for the extra flavor we like. We love garlic so I doubled up on that and added old bay seasoning to the seafood making sure to balance it with the rest of salt in the recipe. The recipe definitely calls for more manicotti shells than was specified, so keep that in mind. It took me a long time to prepare but the steps are easy. We ate it with a vodka cream sauce …updated: we ate leftovers the next day with a marinara sauce and food still tasted great. Hubby loved it with the marinara sauce! Great recipe- definitely a keeper!
