Syliva's Peach Delight

This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

SERVES 10 -12 , 1 pie (change servings and units)

    Layer 1.

    Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.

    Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.

    Place peaches evenly over 2nd layer.

    Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.

I have been making this exact recipe for nearly 30 years and it is, without a doubt, the best dessert DH and I have ever eaten. Any chance I can give it 20 stars? It takes a bit of time but is well worth it, and I think fresh peaches are essential. Making designs with the placement of the peach slices can really improve presentation. BTW, I have never been able to get the gelatin mixture to clear or even thicken very much so I usually cook it about 5-10 minutes on medium. But that has never affected the texture/quality of the final product.
