Blender Quiche - or the whatever you have in your kitchen leftover quiche

The great part is you can use whatever leftovers (well...almost) you have on hand. This dish can be served hot or cold. Freezes very well! Use any cheese of your choice.

SERVES 6 (change servings and units)

Ingredients

    Preheat oven to 350 degrees F.
  2. 2
    Generously grease a 9 inch pie pan.
  3. 3
    Spread shredded cheese across bottom of pie pan.
  4. 4
    Cover cheese with meat and vegetables.
  5. 5
    In a blender, combine eggs, baking mix, salt, garlic powder, onions, parsley, and milk.
  6. 6
    Blend until smooth, then add olive oil.
  7. 7
    Blend until combined, then pour mixture over meat and vegetable layer.
  8. 8
    Sprinkle with paprika.
  9. 9
    Bake in preheated oven for 40 minutes.

    Cool 10 minutes before serving.

This was very easy to make, and quite good. I love how it makes it own crust, and my kids like it too, which is a real bonus with spinach. We will definitely make this again - a perfect cold day winter dish. I was taking this to a function so I didn't get any until it was cold and it was wonderful cold or hot. I used spinach, bacon, and a mixture of cheddar, low fat cheddar and mexican cheese blend for the cheese. I also used 2 tsps of dried parsley, and vegetable oil since I didn't have any olive oil in the kitchen.

    I liked this recipe alot because it is easy and uses what we have on hand. I used 1/2 onion, 1/2 green pepper, and a small fresh tomatoe. I sauteed the onion and green pepper in butter and added tomatoe and 1 tsp. minced garlic at the end. I mixed the other ingredients in my food processor along with 1 tsp. italian seasoning. I used mozzarella instead of cheddar. I sprinkled a little asiago cheese on top of the mozzarella. I omitted the garlic powder and onion flakes. When I took this out of the oven, it is true that it wasn't real firm. After it was in the fridge overnight, though, it firmed up. Yum. Excellent recipe.

    I found this recipe to be amazing . I had never made quiche before and I was happy with how simple it was to make. I didnt quite understand what baking mix was so I used bisquick. I also had no vegtables in the house except frozen corn and the only meat I had was what was left from my Quiznos sandwich that day. I used real onion instead of flakes and still came out with an amazing supper that my husband couldnt keep his hands off. I guess that proves this really is the leftovers quiche and nomatter what you use its definitly something to add to your cookbook

    My husband and I love this recipe. It uses regular milk, a real plus. I made it with bacon, swiss cheese, spinach, mushrooms, and red bell pepper bits for color. Used chopped red onions instead of dry. Didn't have to buy or make a crust. It was perfect. Thanks for a great recipe!!!
