Green Apple Pucker Soup

The apples, cabbage and spices bring out a wonderful flavor. the "APPLE PUCKER" liqueur adds the final savory taste to the soup. The soup can be served hot or chilled. The soup can be made all year around.

SERVES 6 (change servings and units)

    Core, peel and dice apples. Place the apples in lemon water.
  2. 2
    Chop the shallots and place in a bowl. Mince the clove of garlic and place in the bowl. Slice the cabbage thin and place in the bowl.

    Melt the butter in a soup pot. Add shallots, garlic, cabbage and apples to the soup pot. Saute until shallots are soft about 4 or 5 minutes.

    Add 1/4 cup of apple pucker and reduce the liquid by half.
  5. 5
    Add the vegetable stock and the chicken stock to the soup pot.

    Place winter savory, lemon thyme, fresh ginger and bay leaves into cheese cloth. Tie the cheese cloth with string to form a Sachet. Place the Sachet into the soup pot.

    Bring the soup to a full boil and reduce to a simmer for 20 minutes.

    Add the remaining 1/4 cup of Apple Pucker and simmer for 5 minutes.

    Remove from the heat. Remove the Sachet and bay leaves .Season with salt and white pepper to taste.

    GARNISH: Diced Red Apple.
