Feta-Licious Watermelon Salad

This different and refreshing recipe was given to me by a friend. Herb and feta quantities can be adjusted as you wish, but this is the basic recipe.

SERVES 6 -8 (change servings and units)

    Soak the chopped red onion in the lime juice while you are prepping the other ingredients.
  2. 2
    Remove rind from 1/4 whole watermelon and remove seeds. Cut into 1-1 1/2" cubes. Place in large serving bowl.

    Gently add chopped herbs, onion mixture and feta cheese.
  4. 4
    Chill and let rest 5-10 minutes, then gently mix again and serve. Salad will get soggy if kept overnight.

I've been planning to make a salad with watermelon and feta all summer long, and finally got to it last weekend. I brought this salad to a neighborhood picnic, and it was a big hit! Everyone loved the mix of flavors and remarked on the unique ingredient list. The red onion was a big surprise, but very well received. I let the onion sit in the lime juice for about an hour before mixing all the ingredients together. I tossed a few blueberries on top as a garnish — I was going for a red, white, and blue look for the labor day holiday. Thanks for a great recipe, we'll be making it again this weekend.
