Taco Casserole

I take this to a lot of pot-lucks. It is always one of the first things gone! The kids love this!

SERVES 6 (change servings and units)

Ingredients

Directions

    Put 1/2 the broken shells in 2 qt greased casserole.
  2. 2
    In skillet, brown beef, drain.
  3. 3
    Add taco seasoning, water, and onion.
  4. 4
    Simmer for 8 minutes.
  5. 5
    Stir in tomato sauce.
  6. 6
    Spoon into casserole; sprinkle with 1-1/2 cups cheese.
  7. 7
    Add remaining broken shells; sprinkle with remaining cheese.
  8. 8
    Arrange the tomatoes and olives over the cheese.
  9. 9
    Bake at 350*F for 20 minutes, until hot and bubbly.

This was just ok for me. The taste was good but I felt like it was missing something. I did add rotel tomatoes & black olives but I think if I made it again I might also add diced peppers or jalepenos and substitute hot sauce for the tomato sauce. Just needed a bit more zip and a bit more substance.

    I made this last night and it was a huge hit with DH and 3 kids! I used Taco Seasoning instead of the packaged taco seasoning and the flavor was fabulous. I also left off the tomatoes and olives (picky eaters wouldn't have cared for them). I substituted tortilla chips for the shells, as I was afraid the shells wouldn't be crisp enough. I do like the idea of adding a layer of beans, and I will probably try that in the future. Thanks for posting!

    This is an absolute kid pleaser!! My daughter was back for seconds before I got to the table! The only change I made was to use a whole jar of chunky salsa instead of the tomato paste. I served with sour cream. Excellent recipe!

    I tried this recipe a while ago, but kept forgetting to review it. This was a wonderful hit for my picky eaters. I followed the instructions exactly except I used onion powder rather that real onions. Thanks so much for this wonderful dish!!!!
