Creamy Carrot Casserole

Ingredients

• 3 lbs carrots, peeled and sliced or 2 (20 ounce) bags of sliced frozen carrots, thawed
• 2 cups mayonnaise
• 3 tablespoons grated onions
• 2 tablespoons prepared horseradish
• 1/2 cup shredded cheddar cheese
• 1/4 cup dry breadcrumbs
• 1 tablespoon margarine

Directions

   In saucepan cook carrots until just crisp tender.

   drain, reserving 1/2 c cooking liquid.

   Place carrots in 3 quart lightly greased baking dish.

   Combine the mayonnaise, onion, horseradish and reserved cooking liquid.

   Spread evenly over carrots.

   Sprinkle with cheese.

   Toss bread crumbs with margarine and sprinkle over cheese.

   Bake uncovered at 350 for 30 minutes.
