Chicken With Garlic, Apple & Cider

Ingredients

• 2 boneless skinless chicken breasts
• 1 tablespoon olive oil
• 1/2 teaspoon kosher salt
• 1/4 teaspoon ground pepper
• 4 garlic cloves (peeled)
• 1 golden delicious apple (peeled, cored, and sliced)
• 1/2 cup apple cider
• 2 tablespoons Dijon mustard
• 1/2 cup heavy cream
• 1 tablespoon fresh parsley (chopped)

Directions

   1. Cover the chicken breasts in olive oil, salt & pepper. Bake 20-25 minutes in a 400 degree oven until cooked through.

   2. Boil the garlic cloves in a pan of hot water for about 5 minutes. Drain.

   3. In a skillet, add garlic, apple, cider & mustard and simmer for about 10 minutes. Add in the heavy cream and using a fork mash the garlic around. Toss in the cooked chicken after it's done. Simmer 5 more minutes. Sprinkle parsley ontop.
