Delicious Ham and Potato Soup

This is an amazing soup from Toronto, Canada. Great for cold weather outside!

SERVES 8 , 8 bowls (change servings and units)

    Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.

    In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.

    Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

This was quite good on its own. I followed the recipe exactly with the exception that I just used free-range, reduced sodium chicken broth instead of water and elimated the chicken bouillon entirely. You could taste each individual flavour and that was nice. I like strong flavours so I would like to add some crushed garlic next time and perhaps a little more pepper and maybe some other spices. Very good as is though. Thanks for posting!

    I reduced this to 4 servings and used one beef bouillon cube (no chicken) and substituted red pepper for the celery. I did not add the extra salt. My children really liked this soup, and I found it really easy to throw together. I did not blend the ingredients in the blender.

    Very easy to make and I made it even easier by using my stick blender once the potatoes were cooked. Left some in larger pieces though, then added the chicken stock powder & ham, reheated and then added the milk. I didn't need to use the butter/flour step. A 'keeper' using on hand ingredients.

    I love love love potato soup and this one is great!! It's simple , but still VERY tasty! I followed the recipe exactly , the only thing I added was a sprinkle of chives on top for the photo. Great recipe , thanks for posting!
