Peruvian Rice

I have been told this is a staple at the dinner table in Peru.

SERVES 4 , 4 servings (change servings and units)

    Wash and drain rice.

    Saute garlic in oil for a minute or two.

    Add water, lemon juice and salt.

    Bring to a boil.

    Gradually add rice.

    Cover and simmer 20-30 minutes.

    A pleasant versatile side dish. I substituted quinoa for the rice. Even with doubling the amount of garlic and lemon, this recipe still gives a subtle flavor. I think it would work well as a side dish, or underneath a vegetable saute.

    This was a very nice mild flavored rice, next time I might add some minced onion. It went perfectly with the mojo chicken and corn on the cob. Very easy to get together but makes alot, I would say it serves six. Thanks for sharing and this was made for ZWT4.
