A simple Polish appetizer using tomatoes and hard boiled eggs to form "Flybanes" or mushrooms. Add them to salad plates or use them as a garnish. Imagine these sprouting from a platter of potato salad!

Ingredients

  • 8 hardboiled egg, shelled
  • small tomato, halved lengthwise
  • salt and pepper
  • mayonnaise
  • lettuce
  • Directions

    1. 1
      Cut ends off the eggs.
    2. 2
      Stand upright on a plate lined with lettuce to create a mushroom stem.
    3. 3
      Slice tomatoes in half lengthwise, hollow out a bit of the centers and place on the eggs to form (mushroom) caps (if your tomatoes are too big just trim the edges back).

      Dot the Flybanes' (mushroom) caps with mayonaise.

    These look great. I love having a show stopper at potluck dinners and picnics. Now I can turn the comfort-food potato salad that everyone loves (but looks about as exciting as pbj sandwiches)into the talk of the table!
