Posted for ZWT, I haven't made it yet. I guessed on the yield and the time.

SERVES 6 -8 (change servings and units)

Ingredients

    Soak rice for twenty minutes, then drain.
  2. 2
    Bring the coconut milk, water, rice and salt to a near boil. Cook for about ten minutes, stirring constantly.
  3. 3
    Reduce heat to simmer and cover tightly. Let steam for 20-25 minutes.

I mixed the basmati with wild rice :D since I was short of basmati. Well, it came out so exotic with a coconut flavor. lol it's just so good! Even served this with East African Curry. Thanks! Made for WZT4 KKK.

    Made & reviewed for ZWT 4 ~ Kumquat's Kookin Kaboodles! This recipe makes a delicious simple rice. I halved the recipe & it served 4 as a side dish. Thanks Julie for another great recipe
