Spicy Black Beans and Rice (Fusion)

A spicy, vegetarian dish.

SERVES 4 -6 (change servings and units)

    Saute the onions in olive oil over medium heat until they begin to brown.

    Add the garlic, cumin, cayenne pepper, serrano pepper, and turmeric. Saute for another minute.

    Add the bell pepper, green onions, and tomatoes and stir.

    Add the black beans, salt, tomato sauce, lime juice, and sugar. Simmer for half an hour over low heat.

    Add the cilantro and serve over Basmati rice.
