Pita Salad Sandwiches With Tahini Sauce

I love tahini sauce and pita sandwiches! I adapted this recipe slightly from one I found in Vegetarian Times.

SERVES 4 , 4 pita sandwiches (change servings and units)

Ingredients

Tahini Sauce

Pita Pockets

Directions

    In a small bowl, mix all sauce ingredients until blended.
  2. 2
    Slice an edge from each pita bread, and carefully open pockets.
  3. 3
    In a medium bowl, combine feta, tomatoes, and spinach. Add 1/4 cup of sauce, and toss gently to mix. Spoon the mixture into each pocket.

    Divide sprouts, cucumber, and avocado among the sandwiches. Drizzle each with about 1 Tbsp of tahini sauce.

    Serve right away.

    This was a delicious lunch and very filling, Little Miss and I ate this up before we left to go to town and it was so filling that we didn't need to pick up a snack. I really enjoyed the Tahini sauce. Thank you Enjolinfam - Made for Zaar World Tour 4

    This made a very yummy and FILLING lunch! The tahini sauce was quite tasty. I left out the spinach and added a bit of hot sauce. Thanks Enjolinfam! Made for ZWT 4 Zingo.

    Ummmm, this was good! The tahini sauce and avocado added a nice, creamy touch to the crunchy vegetables and salty feta. Don't let the ingredients fool you, it is actually quite filling! Loved this one! Viva los Jefes!
