Incredible Portuguese/Hispanic comfort food. Thanks to my Dad for preparing this recipe so often when we were growing up.

SERVES 6 (change servings and units)

Ingredients

    Cut the chuck roast into 2-inch cubes.

    Brown the cubes of meat in a Dutch oven and drain off fat.
  3. 3
    Add sliced onion, bell pepper, tomatoes, and seasonings.
  4. 4
    Simmer for two hours on stove or overnight in slow cooker.
  5. 5
    Serve in tortillas with beans (like a burrito) or in a bowl and enjoy!
