This recipe came from a KENYA AND TANZANIA web site and is specifically a Swahili recipe. Posted for ZWT4.

SERVES 6 (change servings and units)

Ingredients

Directions

    Put oil into a frying pan.

    Fry onions.
  3. 3
    When onions are brown, add all the ingredients except water.

    Fry for 2 to 3 minutes.

    Add water.

    Cover and cook till tender and all the stock is dry.

    Serve hot as a vegetable dish.

Am always looking for new ways to dress up cauliflower, & here's a great way to do just that! I do have some of my own homemade curry powder but decided to go with French Tart's Bo-Kaap Cape Malay Curry Powder - South African Spice Mixture! Anyway, this cauliflower tastes ABSOLUTELY GREAT, & I'll be making it again! Thanks for sharing the recipe! [Made & reviewed while touring Africa on Zaar World Tour 4]

    I am not a huge fan of curry but this was very good. It smelled so good while it was cooking and everyone seemed to enjoy it. I think I would decrease the amount of oil next time. I also think that I would put the tomatoes in just a couple of minutes before serving so that it was just enough to heat them through allowing them to release some of their juices. This was made for ZWT4. Thanks for sharing your recipe.

    Loved it, loved it, loved it. Loved the smell of curry while it was cooking, loved the taste as I ate almost the whole thing for my dinner! Made for ZWT4 Curry Challenge.
