Maple Beans from Quebec

Recipe #308563 | ½ day | 15 min prep | add private note
Boomette

Jun 10, 2008

This recipe comes from Coup de Pouce. Maple beans are something we have as breakfast from time to time. A little bowl is served with some eggs, bacon, sausages... This is what I like to eat when I go for breakfast in restaurants. Posted for ZWT4 If you use vegetable oil, you'll have to add a little bit of salt.

16 cups (change servings and units)

Ingredients

Directions

  1. 1
Wash the beans and drain. Set aside.
  2. 2
In a big oven-proof saucepan, melt the pork lard. Add onions and cook at medium heat, stirring, 2 to 3 minutes or until soften. Add maple syrup, molasses, tomato paste, pepper, salt and mustard powder. Stir. Add the beans and cover with water.
  3. 3
Cover and cook in a preheated oven of 250 F overnight or at 350 F for at least 7 hours (add more water if needed).

GREAT !! The only change I made was decrease the mustard powder to 1 tablespoon . This worked out great. Very good recipe. Made for Holiday tag.

This turned out great, although I did make a few changes. I soaked the beans overnight, draining the next morning. I put the beans and the rest of the ingredients in a crockpot and cooked on high for about 12 hours. I took it to a church potluck and everyone enjoyed. Thanks France! Made for ZWT4-Canada Crockpot Challenge.

well I did quite a few changes to these beans, I did not have to cook mine overnight as I increased the heat, I also added in some fresh garlic and cayenne pepper, used cooked thick-style bacon for the pork fat, thanks for sharing Booms we enjoyed this!
