Helado De Pina(Pineapple Ice)

This is from Paraguay and is from Flavors of Paraguay by Lynn Van Houten.
SERVES 15
Ingredients
- 1 big fresh pineapple, ripe
- 2 cups ice cubes
- 1 1/2 cups sugar
- 1 teaspoon lemon juice (optional)
Directions

Peel the pineapple.2
Remove the heart.3
Cut the rest of the pineapple in small pcs.4
Crush the ice.5
Use the blender to puree the chopped ice, the pineapple, sugar, and lemon juice.6
Freeze.7
For best results, the pineapple should be very cold.

Yum! I too used canned pineapple and halve the recipe, and used less sugar. I also added more lemon juice. Thanks!

Sweet, cold, and refreshing. I used just a cup of sugar, which was plenty sweet and still held the freezing point down.
