This is a very easy, very healthy and very yummy recipe from wholesometoddlerfood.com. It's great for kids but I have been asked to make it for adult social events. It shocks people because it is so healthy yet looks and tastes "unhealthy".

SERVES 12 , 12 muffins (change servings and units)

Ingredients

Directions

    Heat oven to 375.
  2. 2
    Lightly coat baking sheet with oil or use a non-stick mini muffin pan.
  3. 3
    Combine all ingredients well.
  4. 4
    Shape into nuggets or spoon into muffin pan and bake for 20-25 minutes. (Turn nuggets over after 15 minutes).
  5. 5
    Serve with Ranch Dressing for dipping.

I really liked these, although the kids wouldn't even try them. Lol I made them yesterday for my football party, and they seemed to be enjoyed by most of my guests. I made some ranch dressing, and you're righ, it's a great match. I made a little extra mix, so i could make nuggets for yesterday, as well as 6 muffins, which I will freeze for lunches. I added a little crumbled feta cheese as well. [Made for Fall 2008 PAC]

    These were great! My husband and I loved them! They didn't really resemble "nuggets" but I didn't have a mini muffin pan either. I just used a baking sheet! They tasted awesome though and I'm sure next time I could try to make them look more "nugget" like. Very good!

    Yum! I basically had to stop myself from eating them all since they were made for my toddler! I added a little garlic to mine as well. A baking tray works fine but they did take about 10 minutes longer to cook for me.

    I love these and so does my son whose 14 months old. Surprisingly really good and healthy. I used a mini muffin pan and they baked up nicely.A great recipe I will defiantly make again.
