Pork Cutlets With Maple, Mustard and Sage Sauce

This recipe is one of my all time favorites. It sounds really strange but it is amazing. It's quick, easy and very yummy! It comes from an issue of Bon Appetit.

SERVES 4 (change servings and units)

Ingredients

    Sprinkle pork loins with 1 tablespoon of fresh or 1 teaspoon of dried sage, salt and pepper.
  2. 2
    Melt butter in large skillet over high heat.
  3. 3
    Add pork and cook until browned on both sides and cooked through, about 1-1/2 minutes per side.

    Transfer pork to plate.
  5. 5
    Add broth, maple syrup, mustard and remaining sage to drippings in skillet.
  6. 6
    Boil until syrupy, scraping up browned bits, about 5 minutes.
  7. 7
    Reduce heat to low; return pork and any accumulated juices to skillet and cook just until heated through, about 1 minute.

    Serve pork with sauce.

I came on here the other day and printed this out. I finally got around to making it last night and let me just say....it is awesome!!! I was a little scared of it (didn't sound all that appetizing) but I decided to give it a shot anyway. I am so glad I did! I even signed up on here just so I could leave a review. Thanks for making me look like I know what I am doing in the kitchen.....too easy for how great it is!

    I'd buy this in a restaurant! Yet it's so easy; I'm happy to say that the maple flavor wasn't obvious (I was worried about the sauce being too sweet). I used all dried sage. We will eat this again and again.
