Don't know what to do with all those leftover mash potatoes? Is time short and you need something fast to feed your hungry family? You'll love this so much you'll want to make extra mashed potatoes just so you can make them. The recipe comes from Chatelaine Food Express Quickies 2.

SERVES 4 (change servings and units)

    Preheat oven to 450°F.

    Pat mashed potatoes into 4 small round shapes that are about 1/2 inch thick and place on an oiled baking sheet.

    Sprinkle with cheese and seasonings.

    Bake about 20 minutes (cheese should be golden).

I made two patties out of 1 1/2 cup of mashed potatoe and put some diced ham on one and some hot hungarian salami on the other and covered with a grated pizza cheese (a mix of cheddar and mozzarella). They took 9 minutes at 220C in a fan forced oven and the DM and myself enjoyed. Will consider making again as a side to a meal. Made for please review my recipe a game of tag.

    I added onion powder in my mashed potatoes. I used mozzarella cheese. I added red pepper flakes on 2 cakes. It was great but something was missing. It didn't have a taste of pizza for me. Thanks Dreamer. Made for the Babes of ZWT4

    Reviewed during ZWT4 These were easy to make and baked up nicely. I used parmesan cheese with the Italian seasoning and it didn't melt. It did brown up nicely and was tasty though. I think these potato cakes would be great with some seasonings inside them-maybe fine onions or garlic with herbs. I think these would be by far better with mozarella or mozarella combo for cheese topping. Posting a photo (but I hope you get a better one soon)
