Basil Tomato Soup

The HR department at my job included this in a health newsletter. I haven't tried this one yet, but I like that it uses fresh ingredients.

SERVES 4 -6 (change servings and units)

Ingredients

    In a large saucepan, carmelize the onions, ginger and sugar in a little oil. Add the tomatoes and bring to a simmer. Season with salt and pepper.

    Add chicken stock and simmer on low heat until tomatoes are very soft, at least 20 minutes.
  3. 3
    Pour mixture into food processor, add fresh basil and puree everything. Add seasonings to taste.
