Halloumi & Bacon Rolls

Bacon and cheese. Does it get much better?

SERVES 20 (change servings and units)

    Heat oven to 400 degrees.

    Cut the halloumi into 20 sticks.
  3. 3
    Stretch each slice of bacon with the back of a knife, then cut in half.
  4. 4
    Season the bacon with just black pepper, then sprinkle with the chopped chives.
  5. 5
    Roll the bacon around the halloumi in a spiral and arrange on a baking sheet.
  6. 6
    Bake for 10-12 mins or until the bacon is brown and beginning to crisp.

I made this for a meal of appetizers & salads and thought it went over well. I did precook the bacon a bit by microwaving it until very limp before rolling it around the cheese. I wanted the bacon crispy when it came out of the oven. By the time the cheese was melted the bacon was crispy. Made for ZWT4.

    This made a very tasty lunch today. It's quite salty though. I'm going to try it tomorrow with prosciutto to see if that helps cut the salt just a bit. Thanks Sarah_Jayne! Made for ZWT 4.
