This recipe is from Horst Mager owner of the Rheinlander in Portland, Oregon. We love the food at the Rheinlander and Gustav's(another of his restaurants)

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook potatoes in their jackets, until done.
  2. 2
    Cool slightly and peel.
  3. 3
    Cut into thin slices while still warm.
  4. 4
    In a non-stick skillet, add a mixture of canola oil and olive oil- just enough to coat the bottom of pan.
  5. 5
    Heat oil and add potato slices and onion.
  6. 6
    Season with salt and pepper.
  7. 7
    Saute until golden brown.
  8. 8
    Sprinkle liberally with chopped chives or parsley.

Wonderful potatoes Lynn. I didn't change a thing. These little beauts were crispy, crunchy, tender and flavorful, quick and easy to make too. My dh was in potatoe heaven. Thanks for sharing a dish that I will be making often.

    Yummy! I didn't use red onion because I had an entire bag of yellow ones to use up or the chives/parsley because our two little foodie fusspots were also attempting this tonight ( they could pick out the bigger onion bits but would refuse to pick out the green stuff LOL) This was very easy to make and tasty too! Please see my rating system: 4 stars for a wonderful weekday side dish that went well with my Wiener Snitzels. Thanks!

    These were tasty, but I did have to add some additional spices to get it where I like it to be. It went very well with our German fare for dinner theme, as it was served with kielbasa and cabbage and black forest crisp. Thanks for sharing this recipe. = ) Made for ZWT 4 Summer '08.
