Red peppers and pineapple add the pizazz to this summery salad; while the pineapple poppyseed dressing is what makes this dish shine! I've made it as a meal, but also makes a beautiful addition to a picnic.

SERVES 3 (change servings and units)

Ingredients

Poppyseed dressing

Directions

  1. 1
    Combine all salad ingredients except dressing and cashews in a large bowl.
  2. 2
    Whisk dressing ingredients together until well combined.
  3. 3
    Just before serving: Add dressing and toss to coat. Sprinkle with cashews.

What a nice refreshing salad. I made it for our lunch today. I did use fresh pineapple only because I had some available. This was a quick and easy dish to prepare. Will be making this one again. What a great way to get some of your fruit and veggies for the day. Thanks for posting.

    It has been a long time since I was wowed by a salad as I was this one. It is beautiful in taste and appearance. The dressing belongs in the hall of fame! Halving the recipe for the 2 of us, I stuck to the ingredients list but did vary the prep a bit. After making the dressing, I tossed it with the veggies and refrigerated it until dinnertime (about 2 hours). Just before serving, I added the chicken, tossed it again, and topped with toasted almond pieces. I served extra dressing on the side but we really didn’t need it. The proportions as written were perfect. Thanks so very much for posting this wonderful recipe! I can't wait to make it again!
