Nut and Carrot Sandwich

A great blend of flavors that goes so nicely in a sandwich! Adapted from The Nut Gourmet cookbook by Zel Allen.

SERVES 4 , 4 sandwiches (change servings and units)

Ingredients

Directions

    Mix carrots, walnuts (or pecans), olives, pimientos, garlic in a bowl.
  2. 2
    Add enough mayonnaise to moisten them well and hold the ingredients together.
  3. 3
    Fold in basil.
  4. 4
    Spread each slice of bread with a little mayonnaise and place the carrot/walnut mixture on 4 of the slices.
  5. 5
    Top with remaining bread.
  6. 6
    Cut in half and enjoy!

This makes a TRULY DELICIOUS sandwich! It's easy to throw together and has such wonderful flavors. A definite keeper. Also very forgiving. I don't like olives, and I didn't have pimientos or any red pepper... so for a bit of "redness" I added a spoonful of tomato sauce! Strangely enough it tasted great. I also used vegan mayonnaise, fresh basil, and accidentally toasted the bread when defreosting it, however it was all wonderful. Thank you for posting!
