A Guatemalan recipe adapted from Hot & Spicy Latin Dishes: The Best Fiery Food from Las Americas (Hot & Spicy) by Dave Dewitt. Could be served inside a tortilla with rice and beans.

SERVES 6 (change servings and units)

Ingredients

Directions

    Saute pork in oil for 5 minutes.
  2. 2
    Add salt, pepper, bay leaves, thyme, chiles, cinnamon stick, and nutmeg.

    Stir well.
  4. 4
    Add water and orange juice.
  5. 5
    Bring to a boil, reduce heat and simmer.
  6. 6
    Meanwhile combine tomato, onion and garlic in blender and puree.
  7. 7
    Add pureed mixture to the pork mixture in pan and continue to simmer for 1 hour.

    Add crumbs to thicken broth and simmer for 10 minutes.

    Serve hot.

This made the house so good while it was cooking. My family loved this. Placed in a tortilla. Made for Tastebud Tickling Travellers for ZWT4.

    My DBF went crazy over this dish. I made mine into a burrito with some black beans and avocado-YUM!!! This didn't have too much heat, but had a nice flavor from the spices. I had to use a canned tomato as we are have a tomato scare in the states right now. I also just realized that I forgot to add the breadcrumbs, however my sauce had a nice thickness and I didn't need it. I made this for the ZWT 4 .
