Vanilla Spice Oatmeal

I have been wanting to get more oatmeal into my diet because it is so good for us. This recipe did the trick for me, tastes just like an oatmeal cookie! I have doubled the batch and put it in individual containers. Then in the morning, I pop it in the microwave then add milk and roasted walnuts I keep in the cupboard. Everyone loves it! From The Food Network.

    In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.

    In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.

    When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.

    Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

Well, this was served to just 2 of us, who devoured it with no trouble at all! I actually uped the amount of raisins to a rounded 3/4 cup, & the cinnamon to 1/4 teaspoon (LOVE 'em both!) & breasfast was WONDERFUL! Thanks for sharing a great recipe!     Very nice oatmeal. I think that the cinnamon could be a lot stronger but thats just me. For the sugar I used Sugar Twin Brown and reduced the amount of raisins to 6 to trim back the sugars. I made a single serving using 1/4 cup of oats. All in all quite tasty and will surely make it again.
