Tomato Spinach Delights

These are a nice side dish to use up garden tomatoes.

SERVES 6 (change servings and units)

Ingredients

Directions

    Scoop pulp out of tomatoes. Drain and pat dry.
  2. 2
    Combined cooked frozen or canned spinach with your choice of feta or monterey jack cheese and season with salt and pepper.
  3. 3
    Fill each tomato with above mixture and top with buttered bread crumbs.
  4. 4
    Sprinkle with parmesan cheese.
  5. 5
    Bake 20 - 25 minutes at 350°F
  6. 6
    Serve immediately.
