Chili Scallop and Shrimp Kebabs

This is out of "The Backyard Barbecue Cookbook" If you are not too sure about your chili tolerance, reduce the chili bean sauce. This is great served with rice. Hope you enjoy!

SERVES 6 (change servings and units)

Ingredients

    Combine the crushed garlic, ginger, sesame oil, chili bean sauce, soy sauce, tomato paste, sugar and lemon juice.

    Shell shrimp and devein, leaving tail shells on.
  3. 3
    Clean the scallops.
  4. 4
    Add the shrimp and scallops to the marinade.
  5. 5
    Cover and marinate for 10-15 minutes.
  6. 6
    Skewer shrimp and scallops on skewers. (If using wooden skewers make sure to soak in water for about 30 minutes).

    Cook on a preheated lightly oiled barbecue grill for 4 minutes each side. Baste with the remaining marinade during cooking.

You've done it again Teresa! This is a very VERY good recipe with a mix of sauces & spices I'd never have thought to add to shrimp or scallops. It was good with the shrimp but it took our northern Atlantic scallops to a new level. Yes, the ones we have up here are large and tender but they tend to be on the sweet side, almost overpoweringly so - this took care of that and let the real flavour of the scallops shine through. YUMMY! The only change I made was to omit the sugar - this recipe does not need it. Plus it's so easy - threw it together after working all day. Thank you for yet another great meal!
