Apples are sooo good for you and make a wonderful dessert or even breakfast. This one is somewhere in between and best of all it doesn't have any fat! Can be ready start to finish in under 10 minutes - made in the microwave and can be easily scaled up or down for the number of people you're serving. If your looking to make this more dessert-like, include the optional toppings!

SERVES 1 (change servings and units)

    Using a small to medium sized microwave-proof bowl (with lid if you have one), combine splenda, cornstarch and cinnamon.

    Add 1/3 cup of cold water & vanilla, and whisk until blended. Add diced apple coat them with the cinnamon mixture.

    Cover the dish and microwave for 2 1/2 minutes - apples should appear translucent and be soft, but not be wrinkled. Microwave temperatures vary, so keep an eye on them.

    Leaving the lid on the bowl, allow sauce to thicken on counter or in microwave and cool for a couple of minutes.

    Enjoy fat-free apple dessert OR top with granola, cool whip and sprinkle with cinnamon if desired!

My son and I made this for dessert last night. It was quick and easy to make. I followed the recipe as written but we didn't have any of the optional ingredients so just ate the apples. I liked that they were cooked in the microwave and it was made with ingredients I normally have on hand.

    I made this for myself for a late snack and enjoyed it very much. I used 1 Tbsp brown sugar for the splenda, and regular cool whip for topping over some granola. Very refreshing and easy to make with pantry ready ingredients.

    Quick & easy way to start the morning. I made as directed & found that it wasn't sweet enough for my liking. I added 1/2 tsp brown sugar to it & topped with whipped cream. Made for 123 Hits

    Quick, easy and tasty. How can you go wrong with apple and cinnamon? I didn't have any granola so just used the Cool Whip. I use 1/4 tsp of hazelnut extract and 1/4 tsp of vanilla. I did add an extra tsp of Splenda and that was just right for me. Be sure to use a dish big enough to allow for boil up while in the micro.
