Healthier Than Kfc's Cole Slaw

This is a much healthier version than the KFC clone by Todd Wilbur, and still TASTES GREAT! I changed ingredients to make it more approachable on a low cal, low carb or diabetic diet. It's perfect for me! I thought I had posted this before but had not, so I am really happy I saved it! I don't want to lose this recipe!!! Cook time is time to chill, so prep is really quick. Make it early in the day and it will be ready for afternoon picnics and barbecues.

    Pulse cole slaw mix in a food processor until finely chopped, or chop by hand.

    Combine remaining ingredients in a bowl with a whisk.

    Add cole slaw mix, stirring well.

    Chill several hours before serving.

I made this for the "Unofficial Shopping From The Pantry Challenge ",in the Budget Cooking Forum. ( if you don't know what that means, you see what you've got in your cupboards,"fridge" and/or freezer.And look through the data base and see what recipes you can find and make from those items.) I didn't have the cole slaw mix, but I did have a 1/4 of a head of cabbage, took some frozen carrot slices, and diced those up. Also didn't have the Splenda, and used 3 packets of Equal instead. Didn't have the celery seed, so a 1/2 teaspoon of ground celery powder was used.No buttermilk was at had,so I left it out.The lemon juice was cut down to 1 Tablespoon, and it worked just great.And this recipe really did taste very close to the KFC cole slaw,and will be made again. Thanks for posting and, "Keep Smiling "

    Good slaw. I made a few adjustments...felt this version was a bit too sweet. I halved the splenda, added a couple teaspoons of apple cidar vinegar and used 1/2 cup low fat sour cream instead of the buttermilk (it's what I had in the fridge)...it did the trick for me. Thanks for sharing this recipe! My husband just loved the slaw!
