This makes pretty close to the Velveeta you can buy at the store, and I have found that it is a little cheaper. I usually double this, so I can have a "back-up" for those "grilled cheese and tomato soup" days. This is easy to make and tastes great too! It just don't get any easier than that! You can also add a drop or two of orange and/or yellow food coloring. Note* recipe calls for 1 1/2 tsp. unflavored gelatin, which will be equal to 1/2 of an envelope from the box. Note: Cooking time is cooling time.

    In a blender, put 3/4 cup of the water, 3 tablespoons of the milk and 1/2 teaspoons of the gelatin, and whip until the gelatin is dissolved.

    Quickly add to the hot mixture 1/2 pound of the grated cheddar cheese.

    Whip until blended.

    Pour into an 8x4x2-inch-inch loaf pan that has been lined with plastic wrap.

    Repeat this twice, until all remaining ingredients have been used.

    Cover pan with more plastic wrap and chill overnight before unmolding.

    Keep cold and slice as needed.
