Watermelon Lemonade

This recipe is from Rozanne Gold in "The Oprah Magazine Cookbook." Adjust the sweetness by experimenting with the amount of honey.

SERVES 4 (change servings and units)

    In a food processor, puree the watermelon until very smooth.
  2. 2
    Set a mesh strainer over a bowl and pour the pureed watermelon through it.
  3. 3
    Stir the pulp to let as much liquid as possible drain into the bowl.
  4. 4
    Discard the pulp.
  5. 5
    Pour the watermelon juice into a large pitcher and add the lemon zest.
  6. 6
    Set aside.
  7. 7
    In small bowl, whisk together the lemon juice and honey until honey dissolves.
  8. 8
    Stir this mixture into the watermelon juice, then stir in the water.
  9. 9
    Cover and refrigerate until very cold.
  10. 10
    Serve over ice and garnish with lemon slices.

Made for ZWT4..Sorry but we did not care for this with the honey in it. The honey gave it a weird taste that even the kids did not like. The reason I gave it 3 stars is because I think it will be really good using sugar or splenda instead of the honey.

    Wow, this is so yummy! Great for a hot day like today. I used carbonated water and superfine sugar instead of honey. I also used 2 tablespoons less of it, since we have sweet Meyer lemons from our garden, and don't like things too sweet. I bet you could make margaritas out of these too! Very delicious.
