Winnipeg Birthday Cake

Anyone from Winnipeg, Manitoba, Canada will know of a lovely cake made by a long-time Winnipeg bakery with the shortbread crust bottom. This recipe was given to me more than 25 years ago by a lady from Winnipeg who had an amazing collection of recipes. She'd received it from a friend of a friend of a friend type of thing. Someone obviously created their own version of this special cake. For anyone living far away who can't access the real thing, this version may stir up some good memories.

SERVES 4 -6 (change servings and units)

    FOR THE BASE:.

    Cut butter into dry ingredients and mix well. Pat firmly into an 8 x 8 square pan. Bake 10-12 minutes at 350 degrees F. Cool.

    FOR THE CAKE:.

    Cream shortening and sugar, add eggs and vanilla and beat until fluffy. Sift flour, baking powder and salt together. Add to creamed mixture alternatively with milk. Pour batter into greased and floured 8 x 8 square pan. Bake 35-40 minutes at 350 degrees. Cool.

    FOR THE FROSTING:.

    In small saucepan, stir togethr milk and flour. Cook, stirring constantly, until mixture is thickened and smooth (don't let it thicken too much). Cool.

    Beat at high speed the cooled flour/milk mixture with the butter, shortening and vanilla until smooth and fluffy. Blend in icing sugar and dash of salt. (Desired consistency 10 - 15 minutes).

    TO ASSEMBLE CAKE:.

    Place cooled shortbread base on serving plate and spread with a small amount of frosting. Place cake on base. Ice the cake fully and garnish with chocolate shavings.
