This recipe is from the tv show Nothern Exposure Cookbook. It is a tastey moist meatloaf that get's rave review's. Putting it here for safekeeping.

Ingredients

  • large egg
  • teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • tablespoons Dijon mustard
  • cup milk
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup catsup
  • tablespoons catsup
  • 1 1/2 lbs ground chuck
  • 1 1/2 cups soft breadcrumbs
  • slices uncooked bacon
  • Directions

      Preheat oven to 350*.
    2. 2
      Beat egg lightly in large bowl. Add salt, pepper,thyme, mustard,milk,celery,onion and 1/4 cup catsup'.

      Add chuck and bread crumbs and mix well until thouroughly combined.

      Transfer mixyure to 9 1/4" loaf pan.

      Spread remaining catsup over loaf and top with bacon strips.

      Bake for 1 hour.

      Remove from oven and let set for 10 minutes before slicing.
