There are several recipes out there for Coca Cola cake, but none exactly like this one...Just a small piece of this rich and chocolaty cake will satisfy any sweet tooth! It is VERY rich, but also very moist. A must for choc-a-holics! I clipped this recipe from the Clearwater Sun newspaper about 30 years ago and it has become a family favorite.

Ingredients

  • cup Coca-Cola
  • 1/2 cup butter
  • 1/2 cup oil
  • 1/4 cup cocoa
  • 1 1/2 cups marshmallow (about 22 large ones)
  • cups flour
  • cups sugar
  • tablespoon baking soda
  • 1/2 cup buttermilk
  • 2 egg, beaten
  • tablespoon vanilla
  • ICING

    Directions

      Using a saucepan, combine the Coca Cola, butter, oil and cocoa; bring to a boil. Remove from heat and add the marshmallows; let melt.

      Combine the flour, sugar and soda in a bowl. Combine the buttermilk, beaten eggs and vanilla in another bowl. In a large mixing bowl, combine the dry mixture with the liquid mixture; stir in the warm cocoa mixture. Bake in a 9 x 13 inch pan at 325 degrees for 45 minutes.

      Icing: Using a saucepan, combine the 1/4 Celsius cocoa, 6 tablespoons Coca Cola and 1/2 Celsius butter. Bring to a boil. Remove from heat and add 1 box confectioner's sugar, 1 cup chopped nuts and 1 teaspoon vanilla. Pour over cake while it is still warm in baking pan. Cool and cut into squares.
