I got this recipe from my mom who used to make these when I was growing up.

SERVES 2 -4 , 12 pancakes (change servings and units)

    Beat egg whites until stiff, but not dry.

    In separate bowl, mix egg yolks, zucchini, flour, salt & pepper.

    Stir in egg whites.

    Cook and serve with maple syrup.
