Quick Chicken and Veggie Dinner

I threw this together tonight and we thought it was pretty tasty. this came together in less than thirty minutes because we had a dead line for the begining of Hell's Kitchen... That is our one sinful television indulgence... The rest is pretty much discovery. anyway i hope you guys enjoy this.

Ingredients

  • 3 boneless skinless chicken breast
  • salt and pepper
  • tablespoon butter
  • 16 ounces frozen mixed vegetables (I used Bird's Eye veggies with sugar snap peas, baby corn on the cobs, carrots etc)
  • tablespoon butter
  • 1/2 cup sour cream
  • 1/3 cup ranch dressing
  • Directions

    1. 1
      heat up skillet and put 1 T butter in it.
    2. 2
      cut chickin into thin slices and cook in heated skillet.
    3. 3
      remove chicken when done and keep warm.
    4. 4
      cook veggies in pan drippings and 1 T butter.
    5. 5
      bird's eye has you cover and cook until heated through stirring occasionally.
    6. 6
      stir together sour cream and ranch and use as a dipping sauce or mix it into the meal.

      salt and pepper to taste.
