Avocado Mango Salad

I bruise easily, and Vitamin A is the key. I try to find interesting ways to serve Avocado because it is so rich in Vitamin A. (I don't worry about the fat in Avocado). This goes well as a side dish for Enchiladas, Quesadillas or any Mexican style foods.

SERVES 4 (change servings and units)

Ingredients

Directions

    Place Lettuce Leaves on 4 salad plates.
  2. 2
    Top with wedges of avocado.
  3. 3
    Sprinkle with diced mango.
  4. 4
    In small bowl, combine cumin, chili powder and garlic powder.
  5. 5
    Mix with fork until blended.
  6. 6
    Using fingers pinch spices lightly over avocado and mango to taste.
  7. 7
    Serve.

This was easy to make and totally yummy. I made this as a side salad using more lettuce than one leaf and it was still fabulous. My family thought the mixture of textures and flavors were great. I have already repeated it w/ grilled chicken and some olive oil for a meal salad because the flavor combo is so good.

    Oh my, the combination of the cool, sweet fruits and hot spicy seasonings made this a fabulous fruit salad. I still have plenty of the spice mixture left over so I'm going try it on other combinations of fruit. A great find!

    Another example of simpler is better. I don't think this could be improved upon. We both LOVED it. This may be the next dinner party salad.
