Easy Barbecue Crispy Chicken Melts

Ingredients

• 3 tablespoons butter or margarine
• 1/2 cup original Bisquick baking mix
• 1/4 teaspoon pepper
• 1/4 cup milk
• 4 boneless skinless chicken breasts
• 1/4 cup barbecue sauce (i use more)
• 1/2 cup cheddar cheese (i use more)

Directions

   Heat oven to 425°F

   In 13 by 9 pan place butter; heat in oven 2 to 3 minutes to melt.

   Mix Bisquick and pepper.

   Pour milk into small bowl. Coat chicken with Bisquick mixture then dip in milk and coat again with the Bisquick.

   Bake uncovered about 30 minutes or until done.

   Heat up barbecue sauce (the microwave works fine, put it in about 30 seconds or until warm). Spoon it over chicken then top with cheese.

   Though I add extra barbecue sauce and cheese, make sure not to add too much because then it overwhelms the chicken and isn't as tasty.
