I got this off a message board and am putting here for same keeping. I bet they would make a great appetizer or snack.

Ingredients

  • 1 (16 ounce) jar sliced jalapeno pepper
  • 1 (8 ounce) package shredded monterey jack cheese
  • 6 egg, beaten
  • 1 tablespoon dried parsley

    • Directions

      Preheat oven to 425 degrees F.
    2. 2
      Grease mini tart pans.
    3. 3
      Placed desired amount of jalapeños in tart pans.
    4. 4
      Cover with Monterey Jack cheese.
    5. 5
      Fill almost to the top with egg.
    6. 6
      Sprinkle with parsley.

      Bake in the preheated oven 10 minutes, or until firm and lightly browned.

      Cool 1 to 2 minutes before removing from tart pans.
