Spicy chicken soup topped with cilantro - super easy to throw together! Don't omit that cilantro, it really 'makes' this soup! Tortilla chips make a nice side to this... or even crush a few and top soup before serving.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cut chicken into small bite size pieces.
  2. 2
    Heat large saucepan over medium-high heat, spray with cooking spray (or add olive oil) and saute chicken and garlic until chicken browns.

    Add crushed tomatoes, chicken broth, green chilies, corn and chili powder.
  4. 4
    Simmer for 20-30 minutes to allow flavors to blend.
  5. 5
    Meanwhile, mince cilantro and chop green onions.
  6. 6
    Pour soup into bowls and top with cilantro, green onions and cheese.

Brooke - this was SUPERB! We both enjoyed this for lunch and it was so easy to make - and VERY tasty! I crushed some tortillas chips to serve on top and added some salsa and sour cream, delicious! Made for Photo Tag - merci! FT

    Made for Newest Zaar Tag 2008. This was a very quick soup to prepare (I had leftover cooked chicken in my freezer). We were a little disappointed in the flavor as we like things a bit spicier. I thought it could have used cumin and some other spices as it was a little bland. This also could have been because I didn't have any cilantro (mine went bad and with the price of gas I didn't want to make a special trip to the store). Anyway, I will make this again adding some other spices (mainly cumin) and the cilantro.
